From past member Ann C, who says, “A good friend gave me this recipe and I always make them at Christmas.”
Ingredients
- 1 cup butter
- 3/4 cup sugar
- I tablespoons brandy
- 2 cups S.R. flour (sifted)
- 1 cup walnuts (finely chopped)
- 1 cup almonds (finely chopped)
- icing sugar to cover
Method
- Cream butter and sugar together, then stir in the brandy, flour and nuts and mix well.
- Portion mixture into small balls, place on a greased tray and bake in a low oven for 20 minutes.
- Take out of the oven and while hot, roll in icing sugar and cool.
Mexican wedding cakes are buttery cookies with roots in Spanish baking traditions that were influenced by medieval Arab cuisine. Over time, they became an established part of Mexican culinary culture. Made with various ingredients, they are very popular at weddings and Christmas as a sweet.
