Mango Fruit Cake

The recipe from QCWA Wattles Branch comes from member Lyn W. She said about this recipe, ‘I have collected various recipes from relatives, friends and from my caravan travels, this is the one I like to do.’ 

Ingredients

  • 1x425g can mango slices (in natural juice) 
  • 500g mixed dried fruit 
  • 1/2 cup water 
  • 1 1/2 teaspoons bi-carb soda 
  • 1 1/2 cups S.R.  Flour 
  • 2 eggs (lightly beaten)

Method

  1. Combine the undrained mango slices, mixed fruit and water in a large pot.   
  2. Bring to the boil and simmer, uncovered for one minute then allow to cool.   
  3. Stir in eggs and combined sifted bi carb soda and flour.   
  4. Grease a 15x25cm loaf tin and line the base and sides with baking paper. 
  5. Mix well and pour into a prepared loaf tin. Cook in a moderate to slow oven for about one hour or until cooked.   
  6. Cool cake in the tin.
