Cottage Cheese Breakfast Muffins

Past member Daniel has provided this budget friendly recipe feeding a family and working out at approximately $1.96 per muffin depending on the cost of the ingredients. 

Ingredients 

  • 6 eggs 
  • 200g cottage cheese 
  • 100g grated cheese 
  • 100g diced bacon 
  • Pinch of mixed herbs 
  • 1 small tomato (sliced) 

Method 

  1. Place eggs, cottage cheese and herbs in a blender and blend until smooth.   
  2. Pour egg mix into lined muffin tins.   
  3. Sprinkle diced bacon evenly between the muffins and place a slice of tomato into each muffin.   
  4. Sprinkle with grated cheese.  
  5. Bake in an oven 160-180 degrees for 15 minutes or until golden.   

These freeze well.
