Our very special Christmas recipe has come to us from member Wendy C.
“This was very much a favourite to have with Nanna, and then it was my place to make it for all my grandchildren,” Wendy said. “It was really refreshing on hot days.”
Ingredients
- 2 litre tub vanilla ice cream
- 2 cups orange juice (freshly squeezed)
- Juice of 1 lemon (freshly squeezed)
- 1 1/2 cups sugar
- 1 1/2 cups water
Method
- Freeze 1 litre of ice cream in a container.
- Sorbet filling: In a saucepan, place the orange and lemon juice. Add one and a half cups of sugar and one and a half cups of water and boil. Partly freeze, then pour onto ice cream.
- Put in the freezer until frozen, then spread 1 litre of ice cream on top of the sorbet filling. Freeze until you want to serve it.
- As a variation, you can add dried fruit to the mixture.
- To serve, drizzle melted chocolate and place fresh berries on top once chocolate has hardened.
For a festive spin, add Christmas decorations to the serving platter.
